Sizzling Scallops w/ Fresh Salt Air Market Veggies
1 Pound of Bay Scallops - Drained & Blotted Dry w/ Paper Towel
4 Tablespoons of EV Olive Oil                         2 Scallions - Thinly Sliced
1 Carrot Split in Half & Thinly Sliced on Angle           1 Garlic Clove - Minced
2 Tablespoons Fresh Cilantro - Gently Chopped         1 Tablespoon FRESH Lemon Juice
1 Tablespoon Red Wine Vinegar                                  1 Tomato, Seeded & Cut into Strips
Optional:
1 Fresh Zucchini - Julienned to Match Sticks
1 Fresh Yellow Squash - Julienned to Match Sticks
8 oz Sugar Snap Pease - Julienned on Angle
Make them REALLY Sizzle w/ a Pinch Red Chili Flakes & Two Shots of Ed's Red Hot Sauce

Heat 1 tablespoon of oil in large skillet over medium heat. Add Scallions, Carrot, Garlic & optional veggies of your choice. Sautee until carrot is "crisp tender", about 3 minutes. Transfer mixture to plate. Heat remaining 3 tablespoons of oil in same skillet over medium-high heat. Season the drained scallops with salt & pepper, add to hot skillet and sizzle until they begin to brown, about 2-3 minutes. Return sautéed veggies to skillet; add tomato, cilantro, lemon juice & vinegar. Simmer until scallops are just cooked through, stirring occasionally, about 3 minutes. Adjust Seasonings w/ Additional Veggies - Yields 2 Dinner Portions
